Hello, I am currently a full time graphic designer at the University of Central Florida and have a good amount of experience designing these types of projects. I see a project like this taking about 2-3 days to complete upon receiving all supporting files and details. Using large visual images sounds like a great approach. That mixed with large bold typefaces to draw in the reader, followed by easy to read body type and open white space will make for a very visually appealing piece.
