I have experience in recovering data from VMWare (both desktop versions and ESXi) images, either onsite with physical access or remote disaster recovery.
For this task, I will need a virtual machine, preferably debian linux (which I can install myself, no work on your part needed) with twice the disk space of the .vmdk file (one for original source file, the second for any resulting file after conversion) + some overhead for the linux system itself (10GB sufficient)
I will mount the .vmdk, convert to other format if necessary, examine the LVM, find the right partition and extract the data.
If you'd like, we might event fix the machine so it will boot on Hyper-V (I have been converting files from linux KVM virtualisation to Hyper-V - some minor changes in configuration and maybe different kernel), or set up a fresh virtual http server.
