Hi, I have done similar project in past for a client. The hardware was exactly the same, NodeMCU 1.0 with MPU6050. His requirement was to detect motion and produce an Interrupt signal in INT pin and send an alert to a server over WiFi. The only difference was that he didn't need to save power since it was powered from AC line. The project was successful. I still have the parts laying around so that I can produce the program fast. Few things to note - Common MPU6050 boards have built-in LDO. So make sure to provide 5v for proper functioning. Providing 3.3v to Vcc is not recommended. - Connect INT pin to GPIO16 of ESP8266 to wakeup the module from deep-sleep I can also provide a user friendly web interface for easy configuration of the device.
