Wordpress: function to alert admin when a plugin's user profile updated

I am using eMember plugin for a running club members portal. When a logged in member edits their profile I need the admins to be alerted - it is probably easiest to do this by email.
I have a working Wordpress / eMembers plugin site working - members can log in and edit their profile which updates fine. The plugin has a hook (emember_profile_updated) which can be used as the trigger, I also have the code from the plugin developers for how a function might look:
add_action('eMember_profile_updated', 'run_my_custom_function', 10, 2);
function run_my_custom_function($fields, $custom_fields){
$member_id = $fields['member_id'];
$username = $fields['username']
//A member ($username) has updated the profile. Do something...
}
We are a small charity so our funds are limited, I expect this project to be relatively straightforward and quick with anyone familiar with Wordpress, PHP and particularly using custom data within WP - it is probably under 30 minutes of work.
I can provide access to the WP admin or FTP. I have some coding experience and am happy to provide more detail if required.
