I think your problem is really great and it is possible to create a solution focused on giving you insight into what people think and how they are grouped. I think using word2vec to generate semantic meaning is good idea, but also using a ML model to cluster answers so you can visualize how surveys are related to each other. Another good idea is to use different charts to analyse the data using Power BI. For instance, we could use a word tree to view graphically which words come before and after a given word. So I think your project is very interesting and can be successfully implemented.
