App to graph range of data coming in through headphone jack

We need an app that can read in data coming through the headphone jack. This data will need to be graphed vs time. We also want to be able to display and save the maximum value for each data group. The app will need to display the data very quickly and also be able to compare the maximum value to previous saved values.
