Clean up my dirty old email server

I have an old email server that is sending out spam and getting us blocked by Baracuda amongst other programs. I have several clients who refuse to move to gmail so I need someone to go in there and update stuff and clean it out. I know very little about the mail server except how to add and delete users and create virtual email addresses. Consider me a kindergartener in this process. Please help me so my clients will stop yelling at me.
