I have implemented a few designs now using load cells. The output would be a message via RS232. Good day, we could apply arduino for this purpose, or if you are concerned about accuracy, we could use National instruments' NI myRIO for sending. since we are talking about pressure of 100 tons, you should clarify the surface area it is applied to because a pressure sensor works differently than a load sensor. so, if you are OK with the proposal, we could discuss more.
