I need an Accessible Excel for Mac workbook created

I am a blind small business owner running a vending operation. Any Excel worksheets/workbooks must be developed with Accessibility as foremost. The workbook I would like created should contain a worksheet for each of my vending machines in a Plan O Gram format. We change products often and need the drop down option in each slot and a stepper increment to indicate the number of each item to pull from the truck or warehouse. One of the sheets needs to tally the numbers of each products that we can have a comprehensive "pick List" I have multiple types of machines with several configurations. Some with Cold food items in 6 columns and 6 rows and some snack machines with 4,5 or 6 coluns and on 4 rows with up to 12 columns on 2 rows. This will be used on an iPad in the field. I built a rudimentary workbook in Numbers for Mac, however Numbers does not support dynamic updating /data validation. I need to be able to change and update the reference table weekly.
