2 Logo's and Graphic Creation

I am a start-up company. It is a BrewPub called Central Tavern. Also, the beer line is called Mimbres Valley Brewing Company. So those are the 2 logos I would need. We are located in New Mexico in an old historic building within the downtown area. The Central Tavern is named after the building history, it used to be the Central Bar, Central Bus Depot, Central Sandwich Shoppe, so we have kept the history of the name with the location and would like a logo that helps feature the history or just the historic aspect. We will be serving Pizza and Sandwiches as our main food items, and of course fresh brewed beer. The Mimbres Valley logo would need to have an area that can easily change the name of the product, example is Amber or Stout or whatever we feel the necessity to name that certain type of beer, but I want the logo to be consistent. As a BrewPub we are constantly using different types of beer and would need the convenience of changing this, we do have Macromedia Freehand and Fireworks as well as Microsoft Publisher so once the image is done being able to change that name in that program format would be ideal. Mimbres Valley is originated from the Mimbres River in New Mexico, it starts in the Gila National Forest and is actually a dry river throughout our area but it is still known as Mimbres Valley just north of us. Also I have attached an image from another brewery explaining the process of brewing, we would love to have our own sample like this but don't believe in stealing their designs, plus it would be nice to have our own image. This is going to be posted on a large poster on the window during the construction process but we would like to show how the brewing process works and basically give the viewers something to see besides covered windows.
