You want that your clients get the quote automatically. Naturally they must have access to your quote tool. I think Google sheet will be best suited for you. Client can select various parameters and get the quote. Tool will create the quote as per selection. All the back end data will remain hidden from them which may be updated by you time to time.
The same can be planned in Excel with macro also, if you can share the file with your clients.
