If it used a lot of shortcodes, and has many many pages, than each page has to be checked and corrected to be sure the site looks fine across all over the pages. For a fast work, I would strongly suggest to go with a professional theme from themeforest, I can help you choose one suitable for your site, but only after I see it. I can create the child theme and move everything to the new format. With live sites I usually work with development server, so while the new version is in work, the old one is still untouched.
