Adobe Illustrator - two A3 menus need direct copy

This project must be completed in Adobe Illustrator. Files will not be accepted if designed with InDesign!! I require two CMYK Print A3 (double sided) files created. These must be an exact copy of the attached photographs of existing menus. A3 design measures: 297mm (width) x 420mm (height) all the box sizes as shown in the photographs must be replicated as closely as possible. 3mm bleed. Project must be delivered in 2x .AI files fully editable with no layers flattened. This is a simple copy job which I just haven't got time for myself. More work will be given to the chosen freelancer if accuracy and turnaround time is great. Ideally I need this project delivered within 24 hours. Please quote the word "Apple" in your bid message so I know you have read this briefing and viewed the attachment. Thank you

"APPLE" I can make the menus and to give you in 24 hrs, only a question, have blanks squares, thats transparents or blanks? and the work area is in Super A3 (450mm x 320mm) for when printed, by cutting A3 paper not leave blanks.
